Using assistive technology or a scribe for recording

I am working with a young person who is interested in studying Bio-Medical Science at Uni. They currently have a scribe to help at college. They are exploring apps that can help with recording voice. They have been told that at Uni when they are in the lab they won't be able to use this, because of infection control/ hygiene. Where can we get advice about what are realistic career options for someone with the capability to study a science/ medical subject at degree level, but they will have ongoing difficulties with writing and recording.

Welcome to the community. I'm a bit confused about the situation. What is not allowed in the lab? A person who writes notes or an app which allows voice recording?
The labs presumably use computers, so there must be a way of using assistive tech in there.
