Hello Kirsten,
Please could you advise me how to manage a low carbohydrate diet for pre diabetes with gallstones? Does the type of fat consumed affect the gallbladder/formation of stones?

I wouldn't reconnect a low carbohydrate : high fat diet when you have gall stones.
I would reccomend a balanced of health cabohydrates teamed with lean protein and a small amount of health fat.
For example fresh fruit with natural yogurt full fat. Like yeo valley.
A grilled chicken salad with a few small new baby potatoes
dinner of a stir fry with salmon and courgettes noodles
snack on vegetables and low sugar fruit like berries or stone fruit if you are hungry and make sureness you drink enough water.
